Zucchini Slice

Lunch recipes don’t have to be hard to make or complex.  A simple Zucchini slice can be made in advance, frozen, used for lunch or just a snack on the run.

Zucchini Slice recipe

Ingredients

  • 350g zucchini, grated
  • ¾ cup flour
  • 250g mixed vegetables, eg: capsicum, celery, diced carrot
  • 1 ½ cups grated reduced-fat cheese
  • ½ cup frozen peas
  • ½ cup frozen corn niblets
  • 2 eggs
  • 3 egg whites
  • 1 onion, diced
  • 1 cup diced ham
  • Salt and pepper to taste.

Method

Preheat oven to 180degrees.

In a large bowl all the ingredients except the cheese.

Add 2/3 of the cheese to the mixture. Mix well.

Coat quiche dish with cooking spray.

Spoon mixture into the dish, then sprinkle remaining cheese on top.

Bake 35-40 minutes or until golden brown.

 Variation: To make Vegetarian just omit the ham and add more vegetables.
