Thai Fish Cakes
I grew up eating fish cakes, basically tinned tuna and mash potatoes. There are so many different amazing recipes out there. Try this delicious Thai fish cakes recipe. You can have them for lunch, or they also work as a dinner meal. I usually eat mine with a nice side salad.

Ingredients
- 500 g boneless fish fillets
- 3 level tbsp, cornflour
- 1 level tbsp, fish sauce
- 2 egg whites
- ½ cup coriander leaves
- ½ cup chopped shallots
- 1 cup dries breadcrumbs
- 4 level tsp. Red curry paste
- 2 level tsp. Sweet chilli sauce
- Plain flour for coating
Method
Place fish pieces into a food processor and process a few minutes.
Add all remaining ingredients and process until a reasonably smooth consistency is reached.
Roll into 12 cakes then lightly coat in plain flour.
Generously spray a non-stick frypan with cooking spray, when hot, fry fish cakes until cooked on both sides. Serve with sweet chilli sauce (extra.)
