Chicken Pasta SaladThis is a nice, simple and healthy lunchtime meal but it also works as a middle of the week dinner time meal.  Give this  Chicken pasta salad a try.    You can just buy a pre-cooked chicken for this meal from your local supermarket.

Chicken pasta salad recipe

Ingredients

  • 1/2 cup cooked wholemeal pasta
  • 100g cooked shredded chicken
  • 20g baby rocket leaves
  • 2 chopped Roma tomatoes
  • 20g sliced Kalamata olives
  • 1 tbsp balsamic vinegar
  • 1 tsp olive oil

Method

Combine all the ingredients in a bowl, and enjoy.  You can also season this to taste with salt and pepper.

If you are making it for a mid-week dinner then take leftovers for lunch the next day.  We do recommend using fresh rocket leaves on the day.  However, you can freeze rocket leaves

How to freeze rocket leaves or store them

To store rocket, wash, drain and dry it, then place in an open plastic bag.  That way you can keep it for about 3 days in the refrigerator.

You can also freeze it either as whole or chop leaves and store it in a plastic freezer bag for use in cooked dishes.
