Baked Cheesecake
Sometimes it is all about a dessert. You can’t find a better recipe than a baked cheesecake.
Ingredients
Base:
- 1/ cup flaked almonds
- ½ cup dextrose
- 1/3 cup plain flour
- 2/3 cup coconut
- 50g butter, melted
Method
Preheat the oven to 180 degrees. To make the springform tin watertight for a bain-marie, put foil over the base and through to the outside before snapping the tin in place. Grease foil inside tin.
Mix dry ingredients together, rub in melted butter until mixture has a crumbly appearance and will just hold together.
Press mixture into the base of prepared tin. Bake until brown (approx. 10 minutes). Cool.
Filling:
- 500g cream cheese
- 1 ½ cups dextrose
- 1 tablespoon cornflour
- 3 eggs
- Vanilla essence
- 2 tablespoons lemon juice
- Pinch salt
- 2 cups sour cream
Preparing the cheesecake
Beat the cream cheese and dextrose together until smooth. Beat in the cornflour. Add the eggs one at a time, beating well between each addition. Add the vanilla, lemon juice, salt and sour cream and beat briefly to combine.
Pour the filling onto the prepared base. Bake in a cheesecake tin (place tin inside a baking dish and half fill with water) for 50 minutes. Turn off the oven, but do not open the door for a further hour. Chill and serve cold with cream or ice-cream.
