Japanese Tuna and Rice Salad

Japanese Tuna and Rice SaladJapanese inspired food is amazing, they can do so much with flavours, try this Japanese Tuna and Rice Salad recipe.  If you make enough its a great lunch meal the next day.

Tuna from a can works a treat and makes so many recipes it is not funny.  People do worry about is tinned fish edible or even healthy, you can find that answer to the question here. “is canned tuna healthy‘.  I’m biased because I grew up eating tinned tuna, something I still cook with to this day.

Japanese tuna and rice salad recipe

Ingredients

  • ½ cup cooked brown rice
  • 1x95g can tuna in spring water, drained
  • ½ Lebanese cucumber, sliced
  • ½ cup edamame beans – Read here for the health benefits of edamame beans
  • 2 radishes, thinly sliced
  • a few rocket leaves
  • 1 green shallot, thinly sliced.

Salad Dressing

  • 1 tsp sesame oil
  • Add 1 tsp mirin
  • 1 tbsp. rice wine vinegar

Mix all the ingredients together, into a small bowl.

Method

Place all the ingredients in a bowl. Drizzle salad dressing over the top. Toss to coat with dressing.
