Hoi An Pancakes
On a recent trip to Asia, we got to do a Vietnamese cooking class. One of the many dishes we got to cook was this amazing Hoi An Pancakes. It is an easy recipe to be able to cook at home as well. A great, simple way to impress friends and family.
Hoi An pancakes recipes
Ingredients
Rice Batter – Ingredients
1 cup of dried rice flour
11/2 cups of freshwater
Pinch of salt
1/2 teaspoon of turmeric powder (or curry, saffron or food colour powder dissolved in water)
Rice Batter Method
Mix all together, leave in the room temperature for one hour.
The rest of the Ingredients
150 grams of finely cut shrimps, shelled and deveined (or any other seafood)
2 thin strips of pork
Vegetable oil for frying
2 thinly sliced spring onions
250 grams of bean sprouts
Topping mix – a selection of mint, coriander, Vietnamese basil, lettuce and bitter herb
A packet of rice paper
Method
1. Heat a little oil in a small non-stick frying pan, then lightly fry the shrimp & pork – add to the rice batter.
2. Stir the batter and pour just enough into the pan to create a thin layer – Top with dew bean sprouts and spring onion
3. Fry over the medium to high heat until the bottom of the pancake is crisp. Fold the pancake in half and turn out into a plate.
4. Repeat this process with the remaining ingredients, adding a little oil to the frying pan for each pancake.
Serving Suggestion
To serve, each person takes a piece of pancake, adds a little topping mix and wraps it in a rice paper. Dip into a peanut sauce before eating.
