Fresh Tomatoes and Ricotta Sauce

Italian food is without a doubt one of our most favourite.  Italian food has a great flavour, it’s versatile and something that is simple and easy to make at home.  Wherever possible when making your own sauces, make sure you use fresh ingredients.  Like this fresh tomatoes and Ricotta Sauce, we made from scratch with fresh ingredients.

 

Fresh Tomatoes and ricotta Sauce

Fresh tomatoes and ricotta sauce recipe

Ingredients

  • 550g Roma Tomatoes (ripe), roughly chopped.  ( You can use canned tomatoes if you want )
  • 15g onion, chopped
  • 70g fresh ricotta, full cream
  • 15g Grana Padano, grated
  • 10g Pecorina Romano, grated
  • 5g fresh parsley, chopped
  • 1 tbs tomato concentrate or paste
  • 3 tbs extra virgin olive oil
  • Salt & Pepper to taste

Method

1. Heat oil in a small pot. When hot, add onions and cook for 2-3 minutes, then add tomato concentrate and cook for a further 2 minutes.
2. Add fresh tomatoes and simmer for 10-15 minutes, add a pinch of salt and pepper.
3. Remove pot from heat, add all cheeses and parsley and blend with a hand mixer. Check Seasoning.
