Jerk Chicken

Jerk chicken recipe
Ingredients
6 Chicken Thighs
1 onion, chopped
2 chillies, chopped
Add 2 sprigs of fresh thyme, chopped
2 tsp allspice berries, crushed
4 garlic cloves, crushed
Pinch of cinnamon
Add a pinch of nutmeg
Pinch of Black pepper
2 tbsp wine- vinegar
1 tbsp soy sauce
Method
1. The recipe adds no fat to the meat and the blend of Caribbean spices will help trim your waistline from the first bit. Place the meat in a freezer bag with the other ingredients, Massage the chicken through the bag and leave it to marinate overnight.
2. Bring it back to room temperature then barbecue for 20-30 minutes, turning frequently. Check that the chick is cooked by cutting into the thickest part to make sure the flesh isn’t pink and that the juices run clear.
