Jerk Chicken

Jerk ChickenChicken is one of the most versatile meats to cook with.  The Jerk chicken recipe has a great Caribbean flavour to it.  As being very tasty and healthy as well.  It works well with salads or vegetables, it is a dish that the whole family can enjoy.

Caribbean cuisine,  has a deep and rich spicy history.  One of the most popular cuisines everyone will know will certainly be jerk.   Although it can be pork or chicken-based.  Jerk chicken has distinctive seasoning,

Based in hot peppers, sweet allspice berries, thyme and ginger.  Funnily enough, the history of this amazing recipe is credited to the African slaves brought to the Caribbean island by its Spanish and British colonisers.

Jerk chicken recipe


6 Chicken Thighs
1 onion, chopped
2 chillies, chopped
Add 2 sprigs of fresh thyme, chopped
2 tsp allspice berries, crushed
4 garlic cloves, crushed
Pinch of cinnamon
Add a pinch of nutmeg
Pinch of Black pepper
2 tbsp wine- vinegar
1 tbsp soy sauce


1. The recipe adds no fat to the meat and the blend of Caribbean spices will help trim your waistline from the first bit. Place the meat in a freezer bag with the other ingredients, Massage the chicken through the bag and leave it to marinate overnight.

2. Bring it back to room temperature then barbecue for 20-30 minutes, turning frequently. Check that the chick is cooked by cutting into the thickest part to make sure the flesh isn’t pink and that the juices run clear.
