Sweet Corn and Crab Soup
Simple soup recipes like a sweet corn and crab soup. Is fantastic to taste and simple to make. You can make extra and freeze it as well for later meals.
Sweet corn and crab soup recipe
Ingredients
- 1 tablespoon vegetable oil
- 1 onion, finely sliced
- 3 x 170g tins crab meat, drained
- 1 stick celery, finely diced
- 1 clove garlic, crushed
- 2 tablespoons freshly grated ginger
- 1 x 125 g tin corn
- 1-litre salt-reduced chicken stock
- ¼ cup of soy sauce
- 4 spring onions, finely sliced
- ¼ cup roughly chopped coriander
Method
Heat oil in a heavy-based saucepan over medium heat. Add onion, celery, garlic and ginger and cook for 3 minutes or until soft. Add corn and chicken stock and bring to the boil. Reduce heat and simmer for 10 minutes. Removed from heat and allow to cool.
Transfer to a food processor and blend, leaving soup slightly chunky. Return to pan and add soy sauce, crab meat, spring onions and coriander.
Serve sprinkled with a little extra chopped coriander, if desired.
