Spaghetti and Chilli Tomato Sauce
If there was ever a contest for the most popular mid-week dish, it would be anything made with Spaghetti. This Spaghetti and Chilli Tomato Sauce dish is amazing. Also made with wholemeal spaghetti as a slight twist.
Spaghetti and chilli tomato sauce recipe
Ingredients
- 1 large onion, chopped
- 1 green capsicum, sliced
- 2 stalks celery, chopped
- ½ cup mushrooms
- 2 garlic cloves, minced
- 1 cup sliced carrots
- 425g can tomatoes and juice
- ¼ cup tomato paste
- 1 cup water or vegetable stock
- 2 tablespoons finely chopped basil
- 1 teaspoon chilli paste
- 2 teaspoons dried or fresh oregano
- 2 bay leaves
- Finely ground black pepper to taste
- 1 packet wholemeal spaghetti
Tip – Go as hard as you want on the chilli, just make sure you know that everyone likes a bit of spice.
Method
- Stir fry the onions, capsicum, celery, mushrooms and garlic and carrots in a ¼ cup water for 6 minutes.
- Add all other ingredients, except spaghetti and cook gently for ½ hour.
- You may add seafood if desired such as prawns, scallops, oysters, lobster octopus, etc.
- Cook spaghetti, combine with sauce and serve with garden fresh salad and crusty bread.
