Shrimp gumbo

Gumbo has a rich and deep history, that originated from the south of Louisiana.  Gumbo consists primarily of a strongly-flavoured stock, meat or shellfish, a thickener.  With three main vegetables namely celery, bell peppers, and onions.  Basically it is a soup.   You can play with the ingredients and slant the flavour to what you want, just like this Shrimp gumbo recipe.

This shrimp gumbo is a great paleo recipe dish.  The great thing about soup is if you make enough you can freeze it.  That way you have more available for lunches or dinner when you need it.

Shrimp Gumbo

Shrimp gumbo recipe

Ingredients

  • ¼ cup cooking fat
  • 1 large onion, chopped
  • 1 medium green bell pepper, cut into strips
  • 2 cloves garlic, minced
  • 3 cups dark beef stock
  • ½ tsp hot sauce
  • 1 bay leaf
  • 3 chopped tomatoes
  • 1 can (6 oz) tomato paste
  • 1 ½ lb raw shrimps, peeled and deveined
  • Sea salt and freshly ground black pepper to taste

Method

1 In a pot, heat the cooking fat over medium heat and cook the onions, green bell peppers and garlic for about 5 minutes, until the onions are soft.

2 Stir in the stock, hot sauce, bay leaf, tomatoes and tomato paste, season to taste and simmer for 45 minutes, uncovered.

3 Add the shrimps and simmer for another 5 minutes, covered.
