Mushroom And Prawns
Eating healthy is a choice, and seafood makes a great choice. This recipe combines mushroom and prawns with basil and garlic giving it a nice zesty flavour. Its a great starter dish to be cooked on a barbecue. You can always eat it as a main meal, pared with salads or rice.
Mushroom and prawns recipe
Ingredients
6 fresh field mushrooms
12 tiger prawns
1 tomato, diced
Juice of 1/2 lime
Fresh Parsley, chopped
1 clove of garlic
Fresh basil
1/2 cup of seafood stock
Salt & Pepper
Methods
1. Grill the mushrooms and set aside.
2. Grill the prawns (just be careful not to overcook).
3. Place mushrooms and prawns in a pan with the diced tomato, half the lime juice, parsley, garlic, basil and stock and simmer until reduced.
4. Add salt and pepper to taste and serve lightly drizzled with remaining lime juice.
