Fish Alaska
The name Fish Alaska kind of reminds me of that John Wayne movie “North to Alaska“. Something about big lumberjacks, fishing with spears then cooking fish on an open fire. Just so you know we buy our fish at the local fish market.
Fish Alaska recipe
Ingredients
- 4 x 120g pieces of boneless fish
- 1 tablespoon flora light margarine
- 1/cup shallots, chopped
- 1 heaped tablespoon chopped parsley
- ½ cup skim milk
- ¼ cup white wine
- 1 can (170g) drained crab meat
- 1 cup (220G) grated reduced cheddar cheese
- Salt and pepper to taste.
Method
Melt the margarine in a medium-sized saucepan, stir in the flour with a whisk. Slowly add milk to the saucepan, stirring constantly to avoid lumps. Add the wine, shallots, parsley and crab meat. Mix well season to taste.
Cook fish fillets in a non-stick frypan that has been generously coated with cooking spray, turning once. Once cooked, place the fish on a flat baking tray that has been coated with cooking spray, spoon the sauce evenly over each piece. Sprinkle ¼ cup cheese over each piece of fish. Grill until golden brown.
