Getting the most from Breakfast Pancakes
We all remember Mum, telling us that “Breakfast is the most important meal of the day”, well she was right. A proper breakfast will set you up for the remainder of the day. Just like this coconut pancakes recipe.
If you find that you are prone to food craving further in the day, it’s usually because you haven’t had a sufficient amount of protein for breakfast.
Many people use the argument that they don’t have time for breakfast, well that is just a cop-out. Getting out of bed 5 minutes earlier will help. How hard is it to scramble a couple of egg in the microwave while the toast is cooking?
Lightly pan-fry a piece of steak or 2 lamb chops in butter while the coffee is perking, add a couple of eggs to that and you have a good wholesome protein breakfast.
For an occasional treat, definitely not to be eaten on a regular basis, try some coconut pancakes smothered with butter and cream and a little sugarless jam.
Leftover from the night before always seem to taste good at breakfast time. Leftover curries or leftover vegetable fried in a little butter with a few slices of meat added.
Coconut Pancakes
Ingredients
- 5 egg whites
- Butter
- Grated coconut
Method
- Beat the egg whites until they are stiff. Add enough desiccated coconut until the mixture is firm.
- Drop a spoonful at a time into a hot pan into which you have melted butter.
- ‘Fry on both sides flattening the mixture as it is cooking. They can be eaten with a dollop of sugarless jam or unprocessed honey and cream and butter.
Try this to mix it up –
For a variation, add a beaten egg yolk and a little almond meal to the stiff egg whites to make a firmer pancake, it can be eaten cold later. The original recipe needs to be eaten straight away. You can check out more breakfast recipes here.
