Chicken Lemon and Artichoke Skewers

Chicken, Lemon And Artichoke SkewersYou just can’t beat meat on a stick.  Try adding Chicken with lemon and artichoke onto skewers.  The combination makes it a very tasty chicken recipe.  That can be quickly put together for a dinner or lunchtime recipe.

There is a couple of different types of skewers, generally thin metal or wood stick.  They are probably the simplest ways to prepare food, all you have to do is stick them through whatever food you want to combine.

Skewers are best used while grilling or roasting meats and fish.

Chicken, lemon and artichoke skewers recipe


3 medium lemons (420g)
1/4 cup (60ml) olive oil
600g chicken breast fillets, chopped
2 x 400 cans artichoke hearts, drained, halved
24 button mushrooms


1. Squeeze juice from 1 lemon (you will need 2 tablespoons juice). Combine juice and oil in a jar and shake well.
2. Cut remaining lemons into 24 wedges. Thread chicken pieces, artichoke, mushrooms and lemon onto 12 skewers.
3. Cook skewers on heated lightly oiled grill plate (or grill or barbeque) until browned all over and cooked through. Brush with oil mixture during cooking.

Serves 4.

Cooking with a wooden skewer, try soaking them first.
