Ingredients
1 tsp unsalted butter
1 large white onion, diced finely
1 garlic clove, minced
1/2 cup tomato sauce
1/4 cup low-sodium chicken stock
1 tbsp Worcestershire sauce
1 tsp dried thyme
450g minced turkey
1 egg
1/2 cup breadcrumbs
1 cup shredded smoked Gouda
4 burger buns toasted (Make sure you choose wholemeal)
Method
1. Melt the butter in a large frying pan on medium heat. Add the onion and garlic and cook until the onion is soft and translucent; about five minutes. Add the tomato sauce, chicken stock, Worcestershire sauce and thyme. Simmer until the liquid has reduced enough to cling tightly to the onions about 10 minutes.
2. Preheat a barbecue or griddle on medium. Combine the turkey, egg, breadcrumbs and half the onion mixture in a bowl and mix gently, Form four burgers, making a large indentation in the center of each. Fill each indentation in the center of each. Fill each indentation with some shredded Gouda, then carefully fold the minced turkey over the cheese and reshape the burgers.
3. Cook the burgers until they’re just lightly charred on the outside and one all the way through; about five minutes on each side Place them on the buns and top them with the remaining onion mixture.
The smokiness of the Gouda stuffing works especially well with the savory minced turkey.
